Jacc's Squash Soup

If you haven't tried it, DO IT THIS FALL!!

I made it again tonight. It was a windy, cool but sunny, perfect fall day.

This soup and some fresh buns were the perfect supper for a house of sickies. I added a little cumin and a little maple syrup just for fun. It was very yummy.

The recipe is in one of the stickies. And for a good reason.

Is this the recipe you guys are talking about? It looks so easy to make. I might have to give it a try. Yummy!

If you want to make it even easier roast the onions and garlic with the squash.

Hey, neat, I passed the recipe on to a Facebook friend this morning (giving Jacc full credit, of course!) and she's already made it. She loves it. :D

For those who are calorie-conscious, you could substitute evaporated milk for the cream.

Another variation would be to make this with baked sweet potatoes!

I add a healthy dose of curry to mine - and LOVE it! Oh I also roast a whole bulb of garlic while I'm cooking the squash and throw that in too.

I made the soup again last night but I discovered, to my dismay, that I had bought BEEF broth. GAH!

So, I made the soup with just water instead of broth. Threw in some extra salt and onion. Know what? Still really really yummy. Didn't notice anything missing. :)

I made squash soup a couple times over the last month as well. Basically I did what James' recipe says, sans cream. Then I put in a can of pumpkin and an apple, some curry powder, cumin, some cinnamon and a few shots of tabasco. Don't ask amounts... I basically added stuff, tasted, added more if needed. :) I love soup!

Rosemary. I forgot. That was the other thing I added extra of last night. It seems I like rosemary. I usually like to throw roasted red pepper in there, too. But I totally forgot last night!

May I just add... I just had a bowl of my soup, with a Havarti and Edam grilled cheese sandwich and a glass of wine.

Talk about your warm comfort food! :)
