This one is a slight modification of a Weight Watchers recipe that was published last week.
2 cups chicken broth
1 cup dry barley (pot barley has more fibre than pearl barley)
Cook barley in broth as you'd cook rice. Takes about 30 min.
Heat up a large frying pan with 1 Tbsp olive oil
Add:
1/2 large onion, chopped
1 clove garlic, minced
150g boneless, skinless chicken breast
1 Tbsp chilli powder
Salt & Pepper to taste
Sautee until cooked through
Add:
1 red pepper cut into bite size pieces
1 cup canned black beans (or any bean of choice), rinsed
1 cup frozen corn
1 small can diced tomatoes (such as Aylemer's Fire Roasted tomatoes) - I drain them first then add in the remaining juice if necessary at the end
1 bunch of chopped greens of choice (Chard, Spinach, Arugula or Kale)
Heat through until greens have wilted down.
Add cooked barley and mix thoroughly.
Turn into a glass or ceramic baking dish and top with 1/2-lb grated sharp cheddar (I used reduced fat).
Bake at 350 for 20-30 minutes until cheese is melted and bubbly.
Serves 8 small or 6 larger portions.
For those counting WW PointsPlus, 1/8 serving size is 5PP. 1/6 serving would be 7PP.
ETA: this recipe is totally customizable in terms of the veg, seasoning, meat, etc.
