Pulled Pork on a Bun
3 tbsp paprika
1 tbsp chili powder
1 tbsp packed brown sugar
1 tbsp dry mustard
1 tsp salt
3lb/1.5kg boneless pork shoulder blade (butt) roast, cut into 4 large chunks
1 1/2 cups chicken broth
1 packet dried onion soup mix
1 1/2 cups tomato based chili sauce
3 tbsp packed brown sugar
3 tbsp cider vinegar
1 tbsp soy sauce
1/2 tsp cayenne pepper
Combine paprika, chili powder, brown sugar, mustard and salt. Rub over all sides of pork. Cover and refrigerate 2 hours.
Preheat a large slow cooker. Place pork in slow cooker. Whisk together chicken broth and onion soup mix and pour over pork. Cover and cook on low for 8 to 10 hours or until pork shreds easily with a fork. Using a slotted spoon, transfer pork to a plate and let cool slightly. Skim excess fat from sauce, pour into a large saucepan and bring to a boil. Reduce heat and simmer for 15 to 20 mins or until reduced and slightly thickened. Add chili sauce, brown sugar, vinegar, soy sauce and cayenne pepper. Simmer for 5 to 10 mins more.
Meanwhile transfer pork to a cutting board and add accumulated juices to sauce. Use two forks and shred pork, placing pulled pork in a shallow dish. Pour 1 cup of sauce over meat. Serve pork with coleslaw on a warmed bun, with extra sauce for dipping.

Mmmm... I love pulled pork, and this has reminded me that I still need to get a new crock pot! My last one died before Christmas, boo. Also, a little bit of rum added to the sauce is really, really good.

Gosh, this sounds delish. The recipe probably makes enough to freeze some for another meal. (In our house, anyway.)
