Favourite recipes containing lemons... GO!

I bought a 1-lb bag of Meyer Lemons (about 6 lemons the size of limes) and not sure what to make with them.

Make lemon curd! There's a bunch of recipies out there - I use the one from Martha Stewart's website. Once it's made, you can either make lemon merangue tarts with it, or fold in whipped cream and freeze it to make a frozen lemon mousse (more of a summer thing, but I'd eat it anytime!). I have been known to buy the massive bag of lemons from Costco just so I'll have an excuse to make it!

If you're feeling really handy, you can even jar the curd so it will last for 6-12 months.

Lemon & herb chicken is a fave. I also LOVE lemon curd (almost wrote lemon TURD :lol: ). The tart recipe looks yummy! I think I'll make both of those tomorrow since my chicken is still frozen solid.

I only like lemon with savory foods- not sweet. I love to use them on fish- slice the lemons and cook right on the fish.

Lemon pudding cake - a cake you mix together and then when you bake it, it separates into a light cake on top and lemon pudding on the bottom. Very easy to make. My grandmother use to make this and now I do. I even have a recipe for it with potato starch so I can do it wheat free!

I am with you Jen. When I get lemons they tend to get used on fish and homemade salad dressings. I also like to fill a big pitcher with water and slice lemons in it and it lasts a couple days of beautiful lemon water.

My other lemon use is to cut the lemon in half. Put it in a microwaveable dish with water. Put it in the microwave for 2 minutes and then you can just wipe down your microwave to clean it. It loosens all the exploded and dried on food.

Make up a batch of homemade vinagrette. Lemon juice, olive oil, dijon mustard, pinch of sugar or honey, tarragon, salt and pepper to taste. You can throw in some fresh-squeezed orange juice, too. This is good for basting salmon as well as on salads. Keeps well in the fridge in a glass bottle/jar.

Avgolemono soup. It's a Greek soup containing nothing but eggs, lemon juice, chicken broth and sometimes rice. Yummy on a cold day.
