Heather do these lemon bars freeze well?

 I don't know I've never made them! :shifty:  I can't see why they wouldn't.

The only thing with lemon is that it *might* go a little runny once thawed again, but the taste would be the same.

I think I will try the bark! Thanks for the recipe.

alexk wrote:Baking day for me today; one of my favourite days in the holiday hoopla. My kitchen's a mess and I love it :).

My daughter and I just made a batch of the easiest Christmas bark - it's the perfect blend of salty and sweet.

3 cups white chocolate wafers (I buy them at the bulk barn)
1 tsp oil (keeps the choc from burning)

Melt choc over low-med heat then add:

1 cup salted peanuts
1 cup dried cranberries
3 to 4 cups of Golden Grahams cereal (hard to get here; our Loblaws and Sobeys don't sell it. Our local COOP has it or I stock up when I'm in the US)

Mix well and spread on a cookie sheet lined with parchment paper. Let cool for a few hours and break in pieces.

I put in in celophane bags (from the bulk barn) and give it to friends/neighbours as a holiday gift :).

Apparently you can get Golden Grahams at Walmart? I am going to check it out. This would be a great "treat" for my clients! Thanks!

Big, fluffy white snow storm here today - perfect day to bake :).

Made a batch of my Christmas bark and some fudge. I'm about to start a batch of lemon cookies (love lemon). It's my first time making them; if they turn out, I'll post the recipe.
We train more joyfully and productively when we focus on the now, rather than on our future race day performance. It's a long road from here to there with many miles to go. We need to run each one. Accept where you are today and simply be thankful for the work you've accomplished. KA

Lemon cookies are a hit - and very easy! Hope your husband likes them, Dr. S :). They make a big batch.

1 cup butter, softened
1/2 cup brown sugar
1 package of lemon pie filling & dessert mix (Sheriff's)
1tbsp water
2 cups flour

Cream butter and sugar.
Add pie mix and water - blend well. Add flour. Shape into balls and press w/ a fork or spoon.

Bake @ 325 for 12-15 minutes

Lemon dip (brush on when they come out of oven)

3 tbsp lemon juice
1/4 cup sugar

Heat until sugar melts. Brush on cookies; let dry. Enjoy!

If anybody wants a recipe for chocolate fudge christmas cookies that are so alluring to bernese mountain dogs that they will sneak into the kitchen, knock a case of mandarin oranges off the counter, pull a tupperware of cookies off the counter, eat them all, then keep you up all night pacing with their irritated stomach and ultimately cost you $250 at the vet's, pm me.

On a TV commercial (The Weather Network) someone was talking about how he's looking forward to his mother's turkey and lemon meringue pie. Lemon meringue pie??? For Christmas??? :naughty: Lemon meringue pie is for Easter.
