That's pretty much what we've been doing. We will occasionally buy a loaf of bread when it's on sale and stick it in the freezer in case we're caught out, but 95% of the time we eat the homemade. It works really well!

Sometimes I will throw in a Tablespoon of ground flax seed. Gives the bread a bit of a nutritional boost. Doesn't change the outcome at all.

I love mine, but the bread never lasts very long (bunch of carb-lovers)! I do lower the sugar and usually use honey and it still works out just fine :)

Yesterday I tried another experiment. The Panasonic has a rapid rise option which only takes 3 hours to produce a loaf of bread; a big improvement over the 5 hours on normal cycle. Though I swear the 5 hours includes at least 1 hour of "resting".

First, I used the "soften" function on my microwave for the first time. I haven't had butter in my life for years but i bought some for the bread machine (which I plan to replace with soy butter but I wanted to follow instructions for the first few loaves). Butter is hard as a rock fresh from the fridge and throwing rocks into a bread machine didn't seem to make sense. So I accomplished "soften".

For the bread part, I make whole wheat but I increased the white portion to 1/3 mix thinking that might work better for rapid rise. The book increased the yeast by 1 teasp. And the buttons don't work exactly as the book says when you pick rapid rise for wheat but I finally got them to show wheat/M/rapid rise and pushed start.

The loaf came out much better than the first one I made. Maybe because of the increased white portion. But I like the consistency and that it only takes 3 hours so this will be my standard now.

I add about 1/4c whole flax and 1/2c oatmeal when I make. It looks and tastes nice.

I guess the idea behind that is so that you can have warm bread when you won't be there right at the end of the baking process.

This morning's experiment, I put everything in the bread machine and set the timer. Now we are having a thunder storm. Fingers crossed no power blip at home.

Experiment is complete. The bread is cooling. It is not as pretty on the outside as the loaves I start right away. I couldn't resist cutting it open. It looks fine.

Speaking of kitchen gadgets (sort of) Habs was all excited about my hand coffee bean grinder. I did introduce her to the pineapple corer a few years back.

Yes, I ended up buying at least 3 people a pineapple corer, and my next mission is to find a hand grinder. I probably won't buy one for anyone else though.

technically honey is homemade. I'm not sure there's a why to mass produce it but I could be wrong.
