Looking for healthy, freezable meals

Postby DonnaRigs » Sun Dec 15, 2013 9:06 pm

I am looking for meals that I can pre-cook and then reheat in a microwave easily - stuff that my whole family can eat so we don't spend our entire move dining out at restaurants...

Anyone have any brilliant ideas?

Chili is an old stand-by; beef stew; hearty soups of many kinds; spaghetti sauce (just boil up the pasta); pulled pork. All of these can be cooked up in a slow-cooker in large quantities. Winter is the time for all of these dishes!

Lasagna is great although it does take a long time to cook when frozen.

During our 5 day road trip from Nova Scotia to Manitoba we made sure to eat a big, healthy breakfast at the hotel before heading out for the day. Then we'd have a good, healthy supper at our stopping point (8 hours of driving is enough). So the key, for us, was to have a good variety of healthy snacks, including protein alternatives, in the car in lieu of stopping for lunch.

Some of our healthy snacks included:

Protein powder and tetra packs of Coconut milk (and our QuickShake containers)
Apples
Pears
Oranges/clementines
Baby Carrots
Sliced cucumbers
Snap peas
Mixed Nuts (my favorite recipe is here: http://www.epicureselections.com/en/rec ... asted-nuts )
Greek Yogurt
Apple Sauce
